Pappardele with Shrimp

Ingredients (for 4 people)

  • 1 package of pappardelle pasta
  • 16 large shrimp, cooked and peeled
  • 2 tablespoons of olive oil
  • 1 small red onion chopped
  • 2 minced garlic clove
  • 1 teaspoon sweet paprika
  • 2 plump tomatoes, chopped
  • 1 teaspoon capers
  • 1 cup of white wine
  • Salt and pepper to taste
  • 1 tablespoon ground dried coriander (cilantro flake)



Begin by cooking the pasta according to the package directions. Once done, drain it and set it aside.

Heat some oil in a large skillet over low-medium heat. Add the onion and garlic and sauté them for 3 to 5 minutes, occasionally stirring to ensure they don’t burn. Then, add the tomato and capers to the skillet, season with salt, pepper, and paprika, and mix everything together.

Pour in the white wine and bring it to a boil. Reduce the heat to low and add the shrimp to the skillet. Mix everything together well and then add the cooked pasta. Give everything a good stir to ensure the pasta is well coated in the sauce.

Finally, add some fresh cilantro to the skillet and give everything one final mix. Serve your delicious shrimp and pasta dish immediately with some grated cheese on top.

Pro tip: If you don’t have white wine, you can easily substitute it with 8 ounces of shrimp broth. Simply dissolve 1 cube of shrimp in 8 ounces of water and use it in place of the white wine.
